what is a pressed cucumber salad?

I'm thinking ribeyes on the grill, sweet potatoes (started in the microwave, then wrapped in foil and finished on the grill), and a spinach, feta and pecan salad.

Damn it, I just made myself hungry.

I slice cucumber very, very thin....then add a generous amount of salt, and work it into the cucumber....put in a container, sit a plate on top and something heavy on top of that plate (I just use a container of water), so it presses down on all of the cucumber.....I let it sit like that the whole time I'm cooking everything else....right before dinner, I rinse the cucumber and squeeze the water out. Oh wow, that sounds good. I love Nawlin's cuisine! I grew up on the Gulf Coast and find myself very landlocked now. There are just no oceans close to Atlanta. I really miss good fresh seafood.

We splurged and had ribeyes, fresh corn on the cob, a tossed salad, and garlic bread. We have fresh strawberries with whipped cream for dessert. YUM!

Oh, cool, kind of like fresh pickles! I love thin sliced cucumbers with salt and red wine vinegar-yum!!!!

Tonight I did eye round of beef marinated in onion soup mix & olive oil, then broiled, and no-knead beer bread. The beef was amazing, the bread was ok (kinda beer-y, duh!)
