There are non shellfish restaurants at Disney Springs.

No park admission is required.

My brother has the same allergy. He started with a sudden reaction after eating shellfish when in college. He is now in his 50ís but the allergy has become worse and he canít have it cooking so we avoid shellfish for the holidays when they are coming. I would call the restaurants before booking. They are usually great answering allergy questions.
