If we were staying in Disney World for 8 days, would it be possible to switch hotels on day four and have the dining plan on first four days and not have it on the last four days?

Yes even with them Linking split stays you should be good to do this . You might have to ask them for 2 different ressie numbers I think I have heard something along these lines.
We love doing split stays and this will be the 1st we are staying the entire week at 1 place. |

You'll have to pay for the dining plan when you add it to the reservation.
