How did you like the cabins? Are they good for a person like me who hates camping? We've been thinking about trying them once but have been reluctant for a long term stay.

Glad you got to try Boma hummus. It's my favorite hummus. I have a recipe that is supposed to be from Boma. I've made it several times and it's very good. I can post it, if you would like.

If you don't like the outdoorsy setting they may not be for you. But the interior is very modern and other than the ambience of the location there really wasn't anything camp-like about them.

I found the recipe on the internet somewhere, don't remember where. I've never made the flatbread. I've made the hummus probably 10 times. I usually make a half recipe because I'm the only one that eats it. :) This recipe seems different than other hummus recipe because it does not call for any oil, you could add some if you wanted. If my lemons are small and not very juicy, I've added a tablespoon or 2 of water to get the consistency that I want. Enjoy! I hope you like the recipe. It's my favorite hummus recipe.
HUMMUS
Boma - Animal Kingdom Lodge
Yield: 20 servings
Ingredients:
32 oz Chickpeas, canned, drained, and rinsed
5 T Tahini, mix well
2 T Garlic, roasted
10 each Lemons, juiced
1 t Garlic, fresh
Salt and Pepper
Method:
Place chickpeas in food processor. Puree. Add tahini, both garlics, and half the lemon juice. Mix. Adjust lemon juice and finish with salt and pepper.
Basic Flatbread and Kalamata Olive Flatbread
Jiko, Animal Kingdom Lodge
KALAMATA OLIVE FLATBREAD
3 ounces Kalamata olives, chopped
2 ounces Four Cheese Mix (Royalty)
1/2 ounce Boursin cheese, crumbled
1/16 ounce kosher salt
1/16 ounce fresh ground black pepper
1/8 ounce olive oil
1/8 ounce Micro Greens (Garden Gourmet)
1 recipe of Millet Dough (below)
1. Spread olive oil, salt and pepper on dough.
2. Sprinkle four-cheese mixture on top of dough. Sprinkle Kalamata olives and crumble Boursin cheese on tope of the olives.
3. Bake in 400º oven for about 10 minutes until crispy and flaky.
4. Garnish with micro greens.
Millet Flatbread Dough
1 1/2 pounds high gluten flour
1 1/2 pounds millet flour
1/3 cup hulled millet
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1/4 teaspoon sugar
1 1/2 pounds water
1 teaspoon yeast
1. In a mixing bowl, take the yeast and add to water, mix.
2. In another mixing bowl, add all dry ingredients and mix well.
3. Slowly incorporate yeast and water liquid into mix and mix well.
4. Let all rest in the bowl, covered and refrigerated.
5. Portion, let the dough rest a little longer and use it as you need.
6. Bake in 400º oven for about 10 minutes or until flaky and crispy.

Great Report!
Looks like DD really enjoyed meeting the characters and was FEARLESS! I love when that happens.
The photos of the cabins weren't as I remembered...I remembered a trailer and hated it, but the photos of your cabin looked inviting. It was about 10 years ago, so maybe they have changed a bit.
I love that we can use our snack coupons for Dole Whips now. Heck, I might even try a pineapple float!

It's funny you mention this because in essence these 'cabins' are really trailers.
BTW, the floats are to die for!

Loved teh report and the pics! Loved Amelia with the characters, even when she slept. Tigger was too cute!
