Say your room requires 12 pt and you have a 25 pt contract with only 6 pt currently left. (Ignore borrowing) If you have another 25 pt contract with the same UY, can you combine both contracts 6 + 6 to "pay" the night?
Does it matter if it's the same resort or at a 7 vs 11 month window?
Should we buy three 25 pt contracts or one 75 pt contract? I don't want an accounting nightmare, but would prefer the flexablilty to sell off some points if need be.
This is really confusing to me.

Well the general rule of thumb is small contracts are better to have in case you need to sell.
You can use a small contract to complete your reservation but the 11/7 month window does come into play. If you are within the 7 month window it does not matter where your contract is, all resort points are the same. If you are not within the 7 month window then the 25 point contract must be at the same resort that you are booking.
FYI use year doesn't really have a significance to the booking window.

If you need to use points from two contracts to book a room, they can be combined. Technically you would have to transfer points from one contract to the other in order to accomplish this, but DVC makes it a pretty seamless process.
You can only book at the 11 month window equivalent to the number of points you own at the resort. If you have 6 points left on a BCV contract and 6 points on a BWV contract to be combined, you can't book either resort until the 7 month window.
Since you are looking at such a small number of points, you'll have to buy resale. While resales are completely negotiable, it's pretty much standard for the buyer to pay closing costs. Closing costs start around $300 and don't vary much with the size of the contract. Therefore, if you buy 3 contracts of 25 points each, you're going to add about $900 to your out-of-pocket cost or $12 per point. If you just close once on a single 75-pt contract, your closing costs will be 1/3 that amount.
If you can live with those functional limitations and don't mind paying a little more up front, you should be able to make it work with several small contracts.

Yes if they are from the same resort if at the 11 month. At the 7-month if they are from different resorts.
