View Full Version : So whos doing the Corned Beef for St. Pattys Day?

Not one drop of Irish blood in this girl but will "try" to make a nice St. Pattys Day dinner for tomarrow- ummm....help please!

(A brisket is corned beef right ?.. in need of some serious cooking advice! :o )

Okay, JiggerJ, this is the easiest meal ever. And I mean that.

You buy a corned beef brisket. Don't just buy a brisket, this is different. If you can't find it, ask, they'll be sure to be carrying it now. It's usually covered with this nasty red gelatinous goo - am I making you hungry yet?- which is the brine they put it in (at least, I hope that's what that is). You can wash it off or leave it on. No one in their right mind would leave it on, unless you just don't want to touch it, in which case, it makes no difference, just drop the whole kerschmoley in. It also usually comes with a packet of spices.

Bring a giant pot of water to boil, drop in the spices (if it doesn't have any use some mustard seeds and basil, oregano, whatever), then drop in the brisket and boil it for 3 hours. That's it. Now personally, I don't like it so wet, so I go to step #2.

Step two: fish it out of the water, mix together some of your favorite mustard with some brown sugar or honey, spread it on top and bake it at around 375 for a while until it looks good. My dh loves my cooking directions. No seriously, until the top gets a little golden and it all looks more like meat. 20-30 minutes?

Cut across the grain, or you get a stringy mess. If you want cabbage, drop in the cooking water with the brisket for the last 20 minutes, or while you're cooking it in the oven.

It really does come out good - pay no attention to my sarcasm, it's one of my family's favorites.

And, la la la, I can't remember what was supposed to rhyme with town. And, oh yeah, it's not really corned beef brisket there either. But hey, it's a good song!

Making corned beef and potatoes and carrots. Not a drop of Irish in me, but hey! My Swedish relatives always made it in honor of the Irish!

Not going there.

The mere smell of corned beef will find me rolled up in the fetal position shaking in fear, battling violent nightmares from my childhood that take weeks of therapy to undue.

LOTS of Irish blood here. My usual St. Paddy's meal is corned beef, cabbage, new potatoes with parsley butter and soda bread (the sweeter kind with golden raisins).

My corned beef is pretty much the same as jnrrt's, but I serve it with a mild horseradish sauce. If you don't have the spices included with the corned beef, you can use pickling spices. My son likes to slather homemade apple butter on the soda bread.

And, presto, it all disappears. The guys inhale it, even my son's pickier friends who never have corned beef at home. No leftovers with this meal.

Almost forgot! Dark ale. Can't toast St. Paddy without a draw - even if it's out of a bottle.

About the only thing we can get around here is Bass and Beck's. Sometimes Guiness. (Guinness?) I prefer the Bass, but wow, it's a meal in itself! I'm sure there are lots of others.

Hey, you're welcome! I'm so glad it came out for you, and now you can add one really easy great meal to your repertoire. The only thing is you have to think of it three hours early. That's a problem for me.
