View Full Version : Quart of Strawberries - what to do?

I've got a quart of strawberries and need to bring dessert to the folks tomorrow night. Any suggestions, folks? Mild to moderate baking OK. Non-baking also OK. The recipe can't start with 'Open a tub of Cool Whip." (It could for me, but not for the folks!)

My mother used to make some sort of strawberry layered thing; sort of like lasagne. She put several layers of graham crackers, vanilla pudding, whipped cream, and strawberries in a pan (9 x 13?). Sometimes she added blueberries too. The only problem is you have to keep it cool otherwise the whipped cream breaks down and blends with the strawberry juices and pudding and it makes the graham crackers soggy. At that point we used to call it 'strawberry soup'.

That could be quite tasty. As long as I make the whipped cream myself with Heavy Cream, it has all the things the folks approve of!
Any other ideas out there?

Simple, but good:
take about 1/4 of the berries and mass em with some sugar to make juice.
Slice or leave whole the rest.
Buy an angel food cake (fairly healthy) .
Sure, go ahead and whip up the heavy cream.
Fullproof, yummy and presentation of berries , juice and a slice of cake rather pretty.

Ingredients
2 --8oz packages of cream cheese
1/2 cup sugar
2 eggs
1 tsp vanilla
1 box vanilla wafers
1 bowl of fresh cut up strawberries
1 package mini muffin papers
Method
place muffin papers in small muffin tins.
place one wafer in each paper.
cream sugar , eggs ,cheese and vanilla together.
fill vanilla wafer 3/4 full
Bake at 325 for 20-25 min
top with strawberries

Lime Fool with Strawberries & Kiwi
Servings: Serves 4.
Ingredients1/4 cup whipping cream
1/4 cup fresh lime juice
1 teaspoon grated lime peel
6 ounces imported white chocolate (such as Lindt), chopped
3/4 cup chilled whipping cream
3 tablespoons sugar
2 cups sliced hulled strawberries
2 kiwi fruit, peeled, thinly sliced
4 whole strawberries
4 lime slices
Preparation-Bring first 3 ingredients to simmer in heavy small saucepan. Reduce heat to low. Add chocolate and stir until melted and smooth. Pour into medium bowl. Refrigerate until cool but not set, stirring occasionally, about 25 minutes.
Beat 3/4 cup chilled cream in another medium bowl to soft peaks. Add sugar and beat until stiff. Fold cream into white chocolate mixture.
Place scant 1/4 cup sliced berries in each of four 8- to 10-ounce wineglasses. Press 3 kiwi slices against sides of each glass. Spoon 1/3 cup cream mixture into each glass. Spoon scant 1/4 cup sliced berries in center of each, pressing into center so berries do not show at sides of glasses. Spoon remaining cream over; smooth tops. Cover and chill at least 2 and up to 6 hours.
To serve, using small knife, make lengthwise cuts in whole strawberries without cutting through stem ends. Fan 1 strawberry atop each dessert. Attach lime slice to rim of each glass.
This sounded easy and like a nice light summertime dessert.
I once had a dessert of chocolate pound cake with fresh berries hot fudge and whipped cream, It was superb! I don't think it would be to difficult to recreate if you have the time to make a chocolate pound cake you could purchase the hot fudge sauce.

Strawberry Tiaramisu
1 1/4 cups strawberry preserves
1/3 cup plus 4 tablespoons Cointreau or other orange liqueur
1/3 cup orange juice
1 pound mascarpone cheese, room temperature
1 1/3 cups chilled whipping cream
1/3 cup sugar
1 teaspoon vanilla extract
52 (about) crisp ladyfingers (boudoirs or Savoiardi)
1 1/2 pounds strawberries, divided PreparationWhisk preserves, 1/3 cup Cointreau, and orange juice in 2-cup measuring cup. Place mascarpone cheese and 2 tablespoons Cointreau in large bowl; fold just to blend. Using electric mixer, beat cream, sugar, vanilla, and remaining 2 tablespoons Cointreau in another large bowl to soft peaks. Stir 1/4 of whipped cream mixture into mascarpone mixture to lighten. Fold in remaining whipped cream.
Hull and slice half of strawberries. Spread 1/2 cup preserve mixture over bottom of 3-quart oblong serving dish or a 13x9x2-inch glass baking dish. Arrange enough ladyfingers over strawberry mixture to cover bottom of dish. Spoon 3/4 cup preserve mixture over ladyfingers, then spread 2 1/2 cups mascarpone mixture over. Arrange 2 cups sliced strawberries over mascarpone mixture. Repeat layering with remaining lady fingers, preserve mixture, and mascarpone mixture. Cover with plastic and chill at least 8 hours or overnight.
Slice remaining strawberries. Arrange over tiramasù and serve.
*Italian cream cheese available at supermarkets and at Italian markets

Rezept Erdbeertorte
Zutaten:
1 Tortenboden (einen Biskuitboden in dunkel und dreilagig) den gibt es auch im Handel schon fertig zu kaufen :faint:.(wenn es mal schnell gehen soll)
Dann braucht man noch:
750 g Erdbeeren,
250 g Mascarpone,
500 g Quark (Magerquark),
500 g Sahne,
Schokoladenraspel (kann man auch zum garnieren nehmen)
Zitrone(n) - Schale (kann man auch zum garnieren nehmen)
2 Pck. Vanillezucker
185 g Zucker
Zucker für die Erdbeeren
Zitronenmelisse
Zubereitung
Zum ersten muss man die Sahne steif geschlagen. Dann werden 1/3 der Erdbeeren mit dem Zucker und dem Pürierstab zu einem Püree vermischt. Das nächste 1/3 der Erdbeeren in Scheiben schneiden und je nach Geschmack mit Zucker bestreuen. Den Quark und Zucker mit Zitronenschale und Mascarpone gut zusammen mischen, dann die Hälfte der Sahne und Schokoladenblättchen dazugeben.
2 Böden jeweils mit Erdbeerpüree gut einstreichen. Creme aufstreichen und mit Erdbeerscheiben belegen und aufeinander setzen. Das Gesamtwerk mit Sahne bestreichen (auch die Seiten), mit ganzen Erdbeeren und Zitronenmelisse garnieren.
Gut kühlen, es kann auch eine halbe Stunde in die Gefriertruhe aber bitte nicht darin vergessen.

I believe this to be the aforementioned recipe;
Strawberry Pretzel Stuff ( it was originally called Strawberry Pretzel Salad but I can't bring myself to call it "salad". It really is quite good though!)
INGREDIENTS
2 cups crushed pretzels
3/4 cup butter, melted
3 tablespoons white sugar
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 (8 ounce) container frozen whipped topping, thawed
2 (3 ounce) packages strawberry flavored gelatin
2 cups boiling water
2 (10 ounce) packages frozen strawberries
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Stir together crushed pretzels, melted butter and 3 tablespoons sugar; mix well and press mixture into the bottom of a 9x13 inch baking dish.
Bake 8 to 10 minutes, until set. Set aside to cool.
In a large mixing bowl cream together cream cheese and 1 cup sugar. Fold in whipped topping. Spread mixture onto cooled crust.
Dissolve gelatin in boiling water. Stir in still frozen strawberries and allow to set briefly. When mixture is about the consistency of egg whites, pour and spread over cream cheese layer. Refrigerate until set.

Wow - those are all great recipes!
7Swans - that white chocolate and lime/kiwi bit sounds amazing. I think that's going to be for Jim's birthday later this week! It sounds absolutely amazing.
djgrab - the chocolate dipped is an excellent idea. I never thought of that. I think that's right up the folks alley for summer simplicity with refreshing alcohol, too. :)
Bavaria - my stepmother does a variation of that for her eerdbeern torte. However, while she doesn't tolerate the cool whip shortcut, she does buy the Oetker store base. Don't tell her, but I think this recipe looks more interesting. :shhh: I'm going to have to pull out the quark maker thingy, though. Is Zitronenmelisse the same thing is Lemon extract?
Mel - the individual cheesecakes look like fun, too.
Thanks everyone for the suggestions! I think I'll be buying more strawberries . . .

And that's a bad thing why? Sounds yummy! I'm not sure anything with a strawberry can be bad . . .

7swans, thanks! I was lurking last nite and had no energy left to dig out the recipe! Since strawberries are readily available DW always uses fresh.
